Might be a silly question as they both look very similar but are Gen 4 bonnets between Outback and Liberty compatible as my 2006 Outback need a new bonnet and Liberty bonnets are more plentiful here in Sydney Australia are there also and changes on the updated models on the bonnets?

They are both compatible if they are the same model.

However you cannot mix between them;

I always thought the grille was different between them hence the difference in bonnets but I may be wrong.

Yeah the grille is different. So are the headlights. (Talking about pre facelift and post).
If you can find one, get a GT bonnet. Would be the first on an outback.
