@Alex: My first thought was Marron Tortellini with a burnt Sage butter sauce and a citrus foam; but honestly I think she'd be watery and muddy by that age. Very cool though as there seems to be quite a few in there now - the trick is to make sure nobody down here finds out that I have Marron again. We got poached to extinction a few years ago when we put 2,000 Trout fingerlings in.
