Will use 2nd method :) give me a bit of time to digest before going to bed! (get home at 6)

2 final questions, covered/uncovered cooking? And I forget the second one! Damnit!!

Oh yeah, meat straight out of fridge, or let it sit on bench for an hour to "warm up"

Covered for the most part, uncovered for the last part (30m).

I can't answer the second one.

Then covered again when resting.

My method -

Take out of fridge when I get home from work

Cut up rosemary and cut garlic into slices.

Shove garlic and rosemary combo into roast

Cook uncovered

Last roasting is 50m, uncovered for the last 30m.

It sounds like a lot, but once you've done it once you'll realise it's not really a hassle.

You're only visiting the oven four times over and hour and a half.

I wouldn't leave it out for an hour, maybe 20 minutes.

Again though, more of a Lamb recipe than beef and pork IMO.
