Hi,
So I mentioned in the GT that I was going to try and un-hipsterfy infusing your own oil at home. Pretty straight forward.
Bought a bunch of 250mL condiment bottles ($1.40e);
Poured near boiling water into them, so they were super hot, tipped that out stuffed in some herbs from the garden - in this case it is Sage
And voila!
No glass jar that makes it near impossible to get out, no more getting giant chunks of herb when you pour.
I've done Sage, Rosemary w/ Honey, Garlic, Chilli and Thyme. Oh, and an orange zest from zest that has been sitting in Rum for three weeks!
Doesn't look pretty, but for functionality it works for me. Also, being such a small amount - won't be long before I can try something different.

I just went evo from pura in a 4l cask. I didn't want to go fancy. Idea was cheap and simple.

Hi,
Was a consideration, and I probably should have gone for light considering I'll be using most of it for cooking.
But it will be nice for dipping when people come around.
Which is never.

Wanting to put these chillis from Josh to good use.
Does anyone have a good recipe for chilli dogs?
500g lean mince
2 med onions, diced
3 cloves of garlic, crushed
The amount of chilli depends on how hot you want it
2-3 chilli's (you can whizz them in a food processor with the garlic, its easier and I do it)
1kg whole tomatoes (diced or 2x400g cans)
3 tbsp of tomato paste
1/2-1tsp of ground cumin
Salt and pepper to taste
And if you want, you can add a tin of red kidney beans.
Sautee onions in some oil, add the garlic and chilli and add tbsp of water, add meat and brown. Taste to see if its spicy enough, if not add more chilli (I add chilli powder), add diced tomatoes, cumin tom paste and beans if desired. Transfer to a small burner and allow it to simmer for a good 30mins while stirring every so often so it doesnt burn on the bottom.
It does freeze well too, just add a tbsp of water when defrosting in a microwave
