Open top fermentation vessels

Serious question time, what is the purpose of open top fermentation?


Also, I'm going to sound like a cubt (nothing new) but this chick that walked past just now was the second ugliest thing I have seen today.. She was swearing and carrying on loud as so I don't feel slack for saying it.

I put up with people from amnesty, red cross and now the cancer council almost daily hounding me!! Throw in the greens, green peace, unhcr, save the forking children and I've well and truly hit my limit for the number of fuckstains wanting me to sign something or give money. Seriously cubts,  :fork: right off.

@ josh - theres no "point" to open fermenters, thats just how they were back in the day when Ale yeast was top cropping. These days Ale yeasts are bottom cropping like lager yeast. I guess everyone embraced the ease and simplicity of cylindro-conical fermentation vessels so bottom cropping ale yeast strains were developed.

Why would you bother doing it now? Maybe the particular yeast strain, that is top cropping, might produce certain esters that are desired. Open fermenters tend to be wide and low rather than tall and narrow like cylindro-conicals. This helps produce more esters too as there isnt as much static pressure in the vessel.
