In the Kitchen!

All the fridges and freezers make for a warm environment, and I run the evap system on exhaust during the night, so CO2 go bye bye!

Ah ok. Yeah that makes sense. I spoke to Hugh about it last night. He's pretty keen to hear the results we get. But he said it sounded like we were heading in the right direction. He doesn't reckon he'll get the chance to head down that way till late July at the earliest, but he said he'd definitely drop in and check out what we are doing.

Probably have a few more things to show him by then anyway. Would love to get his thoughts on some of our process.

I genuinely think this Bourbon is going to be a special feather in our caps.

Fermenting beer, on grain... is that essentially a lambic? I know it's not that straight forward, but is that the jist?

souring the mash is fermenting on the grain. But we are using a controlled yeast source so it not "wild" yeast doing the ferment.

Yes but you chose to be Billy Nomates. We didnt choose to go to ED. plus in ED I had fit nurses and The Doc that saw Georgia wasnt hard on the eyes either.

Lucky fucker. I had a Doc that could barely speak english, trying to diagnose a possible heart problem.
