Because in the 80s, when Commodores were introduced, Fords were a bigger car. The falcon was massive compared to the VB/VC/VH/VK/VL. Taxi companies wanted the bigger cars for their fleet.

The taxis I've been in from the city are all like the newer Fords, like the G6E

 I also think the 4.0L ford engine was a little more reliable and generally they got higher km out of them before needing a rebuild, may also possibly been easier to fit up an LPG conversion to.
