If they don't then it sends a clear message to the offenders that there chance of getting caught will drop.
Like anything in life there is a risk.
In Vic the pursuit is monitored and controlled by a senior officer and he decides when the risk is high enough to cancell the chase.

Do you guys think cops should get in high speed chases?
I think it really depends.
If it's gonna be through busy suburban areas, where the chance of accident/injury/fatality is high, I think they should call it off and just wait at their house or something.
If it's in a country area or a highway, I think they should pursue, but if it hits like 200km/h or something where speeds are dangerous, the Senior Officer should call it off as well.
That place still exists?

All the sizzler joints that were here either tuned into a Smorgys buffet, or demolished. In saying that, all of the smorgys have since been made into a Sophias, which is much better than all of them.

Same over here. I just wonder how 'trigger happy' some cops are to push the boundaries. I have vivid recollections of being sped up behind on a rural road at about 2am, my mate at the wheel of his sure-bro-charged VL. High beams ensued and a bit of honking, not one to shy away from a debate over top speeds, my mate planted it and we were clocking high numbers for a few K's, then as we came towards a dog leg, mate didn't indicate to turn left, the red and blues started flashing.
If they had have just pulled us over when they sped up behind, could have dodged about eight charges of reckless etc,
Yes, no doubt some are trigger happy,
A bloke I know is HWP and he openly admits to calling in a lower speed so the chase won't be called off. He only does it if he, being the one that is there, is confident of a positive outcome.
I think I would be correct in saying that not all are like him.

When we get cars that report emission status via satellite and 4G back to a base, that will be the end of Police pursuits.
Kill the engine remotely at the click of a mouse.
