Josh 1080 will ferment fine with healthy viable yeast and a higher pitching rate. The problem with diluting as much as you have is it affects your post ferment apparent extract (AE). Ie the percentage of unfermentables per litre. So you might not end up with the beer you set out to brew. It'll be drier. Which probably isn't a bad thing as it seems like you're aiming for an IPA style beer.

Amsy put me on to Weihenstephaner years ago, such good beer.

As for glass I've found the short stem wine glass style to be pretty good, like Grolsch or other Euros sell. Saw them again recently at a hipster bar.

Wow Nik and Brett, so many knowledge, maybe I need to head over to WA before I embark on brewing.

Perhaps I need two sets of glasses, tall thin ones for the lighter beers and a tulip ones for the heavier beers.

That would be ideal, mate. Beer and food pairing is just as sophisticated as wine and food pairing. Don't let anyone tell you otherwise.

What did you think of the Pilsner Jase? I'm really digging it right now. Especially since we changed up the hops and gave it some more bitterness.
To me it shows that good beer doesn't need to be elaborate. One malt, two hops. It's all about the ferment.
Brewers make wort. yeast makes beer!

I know a bees dick of what there is to know. That's the beautiful thing about my job. I'm learning everyday and almost certainly will till the day I retire.

I liked the pilsner but I think Im more of a heavy beer person. Im the same with wine, give me something that you can stand a fork in and Im happy.

 

I think I may have to get some more just to confirm my first thoughts. :)

I enjoyed the Pale and the Larger plus the amber wasn't bad.

 

Did not enjoy the Porter, way too much burnt coffee nor the Dubbel as i found it too 'malty?)

 

They had a couple of really nice light beers (2.5% IIRC) that were full flavoured and a bit hoppy.

Had no idea there was home brew talk going on in here. I have recently gotten into it after wanting to do it for years.

 

I just bottled my first apple cider and first ale, I am now doing a ginger beer and did my first Mini BIAB beer last night. The first beer I just bought a fresh wort kit, Was great fun doing a little more than just pouring water into the fermenter.

I love the beer they make, I even went and bought two of the packs they had. It had 3 of their beers and a nice glass for $20.

After reading this thread I decided I'd go get myself some Weihenstephaner. Tastes quite similar to Heineken, not quite as bitter but still a bit too much for me. I got the kristal weissbier so maybe the other variants will be better

I wouldn't be able to tell you about the others as it has been a while since I last had one. And I have not actually been able to find the Kristal Weissbier, You should maybe try the Hefe Weissbier, it is a little bit less bitter but not sure if it would be low enough for you.

 

So I have got a little carried away with home brew and now have over 80 bottles sitting around, though some are 330ml. I still have some of the first beer I did and its actually changed alot from the one I had after two weeks in the bottle. And I can say the Ginger beer and the mini BIAB beer I did turned out fine, little disappointed in the Ginger beer as it doesn't have enough burn of Ginger, But will try a ginger extract in it when I try for another one.
