I wanted to do a Brisket on the BBQ yesterday but the butcher didn't have any, said they'd all been chopped up into forequarters - So I had to settle on a Bolar Roast.
Seasoned with Salt, Pepper, Brown sugar, Chilli and Cumin
- Seared for 5min each side on the grill
- 3hrs indirect heat on the BBQ with hickory wood chips over the heat
- 3hrs in the oven to finish
- 30mins resting time

Meh, it was ok. I wanted Brisket so i was never going to be happy with the roast. The smokey flavour was awesome though and the bark from the sugar was delicious.
Even better the second day cold from the fridge in a sandwich!
