Then do it there are so many ways you could do it, depending on what you like as far as flavours go! shallots and ginger is nice..... lemon and garlic..... one of my favourite recipes for fish is a foil wrap and done on the BBQ, I use slices of Lemon, Lime and oranges and some thyme and stuff the fish with that and salt/pepper, marinate the whole thing in some olive oil, lemon, lime and orange juice (all fresh squeezed) then cook
I freaking love that one.

Hahaha, well you were asking for ideas that you could use, it would work perfectly with snapper too but yeah personally I have to agree fully with Nik in that I would keep it simple with a good fish like Snapper.
Hmmm yeah I feel like fishing now too.... maybe I will go for some whiting tomorrow, needa check the tides.
