my housemates a keen bow hunter and lives on a property near Glen Innes in nsw where there is a lot of deer, he made some venison jerky that shit is soo good along with venison steaks, venison stir frys and venision stew
Anyone who hasn't tried venison (deer) in any of these combinations really should its basically a lean beef imo

So Jerky is dried using heat and often contains preservatives/sugars - Biltong is dried with air, and would be expected/assumed to be additive free.
More tender than jerky.
This is whiskey beef jerky

Biltong can be rubbed with brown sugar as part of the spice mix. And is soaked in vinegar prior to that, as a natural preservative.
Biltong slices are tender, but the stokkies are dry and snap or split, sort of almost in a fibrous nature*.
I think maybe the Stokkies are smoked at some point as they contain about 12% Ash*.
* This is with Protea Foods Biltong.

Roge, yeah I feel as though some of the commercial jerky is a bit over processed. I considered getting a dehydrater, and an old boss had one, he used to make watermelon chips and jerky, but it's just another appliance to gather dust after the novelty wears off.
