This whole thing is BS. I've been to a MSC factory that supplied a factory making nuggets. The stuff is practically white. The breast bones left over from the removal of other meat is sent through some equipment that separates the bones from the meat. The meat is not treated with NH3. It is either chilled and put into combos fresh, or is frozen in lined 60 pound boxes.
It is not anything like the picture shows, other than maybe the texture.
Fresh lasts only a few days refrigerated, and must be used soon.
Read the labels of most of your cold cuts or hotdogs. You'll see MSC on all of your discount lines, including Oscar Meyer.
The only product I know of that is treated with NH3 is a beef product made from fat trimmings. End product is about 93% lean, and used in many value products, but it is 93% lean, and no, there is no residual NH3 left.
