Activating the yeast. ie. Adding moisture and carbs (sugar & water) to reactivate dehydrated yeast. Yeast is a fungus that feeds on sugars and requires moisture, add these these 2 nutrients and it will quickly multiply causing fermentation - beer to brew and bread to rise.
