Check out CarbonBlack.com.au as they've got a sort of calculator which lists what tyres are available for x-spec dimensions. I don't know what to do about rims. Was looking at the Forester range but nothing catches my eye at present apart from the old school GT ones which are hard to come by.

Looks like 225/55-17's are the way to go at only -1% out.
235's are -0.6% but they would be ridiculously wide!
I reckon the new GT/XT Forester wheels aren't too bad. I'm trying to convince mum to buy one at the end of '11 when the lease on the Lexus runs out. She wants another Lexus but the $30k+ price difference is sure to win her/dad over!!
