@Adam: I'm going to have a bash at corn chip chicken strips on Sunday. Thinking a guac style dip to go with, maybe with an extra chilli hit? I was aiming more at a snack than a meal. Have you ever played around with the egg used for binding the crumb mixture to meat? I saw a couple of recipes calling for sauce to be mixed with the egg?

Salsa sauce/ chilli sauce. But calling for like 1/2cup into one egg. Seems extreme!

A career path I'd like to get into would be (in order of preference): NSW Police Force, Customs, Australian Federal Police or the Fire and Rescue Service, but I won't be able to apply for them until September when my 2 year without a fine period expires.
Feeling like a sook at the moment I think and confiding in my fellow SubyClub'ers for motivation and/or experiences to assist with decision-making.
Good on you for wanting to get into a career like those. I wish you all the best with it

When I am doing coated chicken of various descriptions I usually start by rolling the chicken in a bit of flour that is laced with whatever spices I am going for... then the egg dip, then the coating which is also usually spiced... another thing I found worked really nicely was a bit of ground parmesan cheese through the coating mix..

Yeah I know, it's just the egg mix I've never bothered with. Seems a bit over the top, but may as well give it a bash.
Parmesan and using panko instead of bread is a must.
