If you have SAGE - use it - Chicken LOVES sage.

Pesto; by ratio:
2:basil
1/2:parmesan
1/2:olive oil
1/3:walnuts/pine nuts (I like walnuts)
Garlic
Lime juice (most people use lemon, come at me)
Seasoning
For what is pictured I actually used Danish Fetta as well as Parmesan, and it has come up YUM!
//start water boiling for pasta on different hot plate// + turn on heat to a frypan with oil & salt
Cut the chicken into pieces, smash them into a hot frypan and brown quickly, turn the heat down, add a good dollop of pesto, about 1/4 cup of cream, some spring onion and let simmer for 6/7 minutes until chicken is on the edge of cooked through, throw in some cherry tomatoes and cover//
