Amarillo Pale Ale (its looks dark LOL) It is a 31L drum thats why it looks half empty

Haha BUBBLES!

Mmm Day one and I thought it was pretty tasty already haha

IPA - actually kind of tastes a bit honey-ish or something but nice (I literally just put it down

Dude, 28 is a very hot ferment. The reason it didn't bubble any faster is because of the ullage that it has to fill with gas before a decent release pattern starts. You need to cool that down though mate, it will taste pretty nasty/green if you don't.

Nik

I have had two fans blowing on that shit all day and ice packs around it to try and cool it man, I know that 28 is too hot, guy at the brew shop reckons for my brews around 22 would be fine.
Might have to invest in an old fridge with an updated thermostat to sit it at the right temp LOL.

Here's to the day we sit down and compare.
Also, here's to an hour or so later when we put our pants back on and try each others beer.
Cheers,
Nik

I lolled.
I have come to the conclusion that I can not bring the temp down on these batches enough - I am condeming them.
Thinking of buying a small fridge and modifying the thermostat so that I can sit the thing at 19 - 22 degrees constantly...
Thoughts?

If I wanted to I could just use the kegerator when I get it as it can be set as high as 25 degrees... but that would mean I would have no cold beer on tap during fermentation which is not acceptable

I'll write one again later.

I will keg them - moreso for the practice of gassing them up - do you use and finnings with your brews to reduce the sediment or use a filter or anything ? (I hear using the filter removes the yeast which means it's shelf life is reduced down to like SFA)
