I'm wondering if a switch to LED will still give me the dimming light when the door closes or if it just switches off once the voltage drops?

I think tuning is a crime of passion, or maybe a labour of love. Either way it furiates and excites me.

The technical answer is that the dim will be different.

Assuming the stock dimmer does a linear ramp of voltage, a filament bulb will give a roughly linear drop in light output.

LED, on the other hand, will give more of a exponential reduction in light output. It'll look like a constant output for a while, then rapidly drop.

There's also a bit of lingering light output after it appears to be 'off', as the circuit slowly bleeds charge away below the LED forward voltage.

Yep. Mine comes on faintly with the brake lights as well sometimes lol.

The flickering you won't get rid of, unless you find a control unit out of a car that uses LEDs stock, and do some fiddling to the wiring to get it working. Incandescent dimmers work very differently to LED dimmers. I won't get into the specifics, you can look that up if you're interested. Generally it will work, but some brands will flicker worse than others. If the flickering gets worse, it's time to replace the lamp.

MY00 Red RX, a nice daily that was sold off once the B4 became reliable...
MY02 Blue B4, aka 'The Project' - v8 JDM STi engine package and assorted other 'goodies' - Sold, then bought back for parts. Stripped and crushed.
MY03 Blue RX, the newer old daily, pretty well more B4 than RX now... In the process of being converted to the track toy... Watch this space!
