Well, don't use any "brett" yeast and I dunno.. maybe switch out for champagne yeast or something (push that % up jimmeh) ?

ok, sorry for the lack of updates/ I have a pic of the last batch of beers at work. Nothing was amazing in that lot.

Went to Carlisle Celebrations after hearing good things (Hi Nik). Was very impressed (and that was before I got a discount :D , talking to staff works a treat hehe)

60 and 90 minute IPA
Palo Santo Marron

Mikkeller

Dim Sum - Lemongrass and coriander
Dim Sum - Orange and star anise
DSB - Its a collaboration brew with them and struise

Hi,

Awesome work Richo! Really glad you got some of the Stone and DFH. We have the same brews so it will be nice to compare notes going forward.

How cool are the Stone labels? I love them! Big company obviously to ceramic print every bottle like that.

I had the 60 minute lastnight and I have to say, I don't think it was at its peak... Great hop arroma from the bottle, but as soon as it was poured into a glass, it was lost. It didn't taste of anything special and was fairly much flat.

Hi,

Disregard 60M/ aquire 90M. Should be very low carbonation, a bit like our beer, but I prefer mine to their 60 - their 90 however! Shit!

Stone & Wood Draught Ale. No preservatives, Australian barley and malt with galaxy hops (not sure whether the hops is australian).

HIt the spot perfect today, extremely fruity (think tropical juice not your usual plums/dates etc) aroma and aftertaste, . Bardude also gave me a sample of the Stone & Wood Pale Lager (had already had 1 schooy when I saw the S&W's but was only staying for lunch and had to drive so had to choose) was nice, clean and refreshing but not much flavour to it.
