Paulaner Oktoberfest.
Very easy to drink, lower carbonation encourages a quicker sipping technique. Buy one, try it. It cost be $5 for a longneck at Cellarbrations.

Dark powerful ale, 7.9% (or was it 9.7%?) held an interestingly good head for a high alcohol. Seriously, over winter. Buy it if it's on tap near you.

So I come up with this.... pick it to bits for me and tell me where I am making mistakes etc.
According to beersmith it fits an American IPA.
IBU 49
SG 1.064
EBC 28.5
Grain
1.5Kg Pale Liquid Extract
2kg Pale Malt
1Kg Melanoidin
0.4kg Caramunich I (for shits and giggles)
Hops
@ 60m
25g Simcoe
10g Centennial
@ 45m
15g Centennial
@ 30m
10g Cascade
@ 1m
20g Cascade
Safale US-05
Will keg condition and prime with corn sugar this time instead of force carbing....

Just use dextrose bro, corn syrup I'd consider more of a mash adjunct than a primer. 1.063 is pretty heavy mate, that'll end you up at around 6.2%, maybe a touch more - but you'll have to be careful on temperature control because with such a loaded mash the yeast will be hard to slow down. I would aim to pitch at 16deg if you're keen on the SG.
400 grams of crystal is heaps in that grain bill. I would think you should go for around 100G - you're going to get good colour and punch from the Melanoiden, so unless you're really keen on playing with the crystal, I'd leave it out. Do a brew, and then do another one later exactly the same except for adding a little bit of crystal. This way you'll actually know what the crystal is effecting flavour wise.
I'm making pale/melanoiden/tiny bit of wheat// this morning. Full nelson sauving up until EOB and throwing 40G of Citra at it.

I fell in love with the "Busted Lukosh Ale" name hahaha, but calling it "Rich Man Ale" with the catchy little "I don't need no discount" slogan could work

Good to see the enthusiasm on the "homebrew" approach, im also thinking down the same path once i am all settled with fundages. still a n00b to the beer scene myself, but been into the micro-brewery scene for a few years and now slowly branching out on the international side too.
so im yet to venture and enjoy the beers posted in this thread
