I used wings as they are cheap (even free range) and are, IMHO, the tastiest part of the bird.
They also cook fairly quickly and I cut the tips off for Elvis while I'm prepping the pieces.
I marinated the easy way...Dry pre-mixed spices (portuguese and piri piri and chilli flakes) zested a lemon and tossed it all in olive oil.
I served up with BBQ'd pineapple and Schultz smokehouse Bacon, a couple of cherry toms and a side of store-bought potato salad (local IGA, it's decent)
I made a little dressing out of lemon juice and a fresh red chilli (no seeds - am gay I know) with a pinch of Maldon smoked salt, raw sugar and olive oil then shook till it emulsified...i used that to glaze the cooked chook when plated!
Thanks to Gaz (G-Star) for the inspiration.
This really is a great forum full of great people
Elvis thought it smelt pretty awesome, but no cooked chook for my Dog.

We must compare our recipes one day. Do a taste test for the rest of the guys that show up on our meet. We can call it the 'Portuguese BBQ Chicken Meet'.
Wanting to buy/looking for: single genuine STi rim, genuine STi front lip, Corazon or Zero/Sports grille and another OEM grille

That's what we used to do on GTRydaz. Worked out awesome. Harks back to the good old 'bring a plate' days of the 70's/80's.
Also gets the partners involved on some non car talk levels.
Don't forget I'm there in June, Aekklestone. We must start planning soon! Mr. "Any Updates".... Ha!
Cheers,
Nik

I reckon the Lemon/chilli dressing is a 'must'...so simple but absolutely value added the dish.
Wings are honestly the way to go if just for You and Rach Adam
