It is good actually, still really looking forward to this first batch of Ale with the Melanoiden grain in the bill. Should keg tomorrow. Need another set of hands to lift the fermenter, it's still sitting at a buck twenty - can't move it on my own!

Still working on the mix of Nelson Sauvin and Citra. 40G citra really late into the boil just before whirlpool, seems to work well. This time I actually scraped the hops from the side of the kettle back into the boil a couple of times, really fizzed up. Should be pretty smooth still, only looking at 120G Nelson + 40G Citra in total for an 88L boil. First add was only 20G of NS, then 15 minute intervals thereafter.

Your onto a good thing so I can see why :D It is interesting how such small things can really change the end flavour hey.

It's a funny old balance I suppose. What's interesting to me is how enjoyable the Wheat Ale is, even though it's straight NS and only 80G into a 70L kettle! Not final minute add at all. Still keen to crack out the Challenger and see what I can do with that though.

what percentage do your brew usually come out at ??

I tried one batch of the Amarillo with the Safale S-04, and the second with Saf US-05, varied the flavour heaps hey, same fermenting temp cos I controlled it this time.

The US-05 seems a little more dry.

That brew will be about 6.2%, I do anything from 4.8 - 10.

US05 is my preferred yeast, doesn't throw too much on the flavour in my experience. I'd rather get a recipe rock solid, and THEN play with the yeast strain so that I can confirm that it's what has made the difference. Trial and error is a long process in the beer game, and record keeping (though it should be) is not my strongest suit.

I hear you on the record thing..... I honestly didn't keep shit until you suggest that I should :P

And If I am honest I forgot to take the O.G reading on the batch I did with US05 :(
