I didn't say he couldn't.
Alisha is finalising our flights today, so I'll let you both know ASAP. The flight centre people forked me around, but that's not a beer related story.

Nik.. You didn't post your grains..
Hows this sound as a general idea
Dark - stout/Imperial, aiming for chocolate flavours (maybe with some chocky too ???).. dry hope with nelson (small amount, just to give a slight "wine" thing), don't too much care what is used for bitter... use chamagin yeast (is that like a second fermentation ?) to hit.. ~12%
crack ??? or interesting ?

The SafLager Grain yeast will be sufficient for high alc. Champagne yeast is a possibility, but it is immensely expensive.

Weiss Best a darker malt? lol funny cos Weiss is german for white.
