Hows this sound as a general idea

Dark - stout/Imperial, aiming for chocolate flavours (maybe with some chocky too ???).. dry hope with nelson (small amount, just to give a slight "wine" thing), don't too much care what is used for bitter... use chamagin yeast (is that like a second fermentation ?) to hit.. ~12%

crack ??? or interesting ?

Hi again,

The SafLager Grain yeast will be sufficient for high alc. Champagne yeast is a possibility, but it is immensely expensive.

where you have 10x this and 4x that and 1010, 1572 etc.

Weiss Best a darker malt? lol funny cos Weiss is german for white.

That would be the special wheat mate, so yes, white would be a good description.
