He sent through a "Termination pay advice" form that said I was paid $807 but Pay G was $260
The pay before that was only taxed $74 for the same $807 amount. Is that right?

I think (only through past experience) bulk payouts (redundancy, annual leave payouts etc) outside your standard pay is taxed to all hell.

Reason for this is they tax you higher since you are getting a bulk payment all at ones, and tax is calculated on that payment multiplied by either 12 or 24, depending on your pay frequency, to get a yearly tax percentage... so according to the ATO, they think you always get paid like you did in the final payout for the whole year, so you may have jumped a tax bracket... in that case, you will get what is owed to you, the extra amount taxed that shouldn't have been, when you do your tax refund for the financial year

Just got an email back from him. This is what he says:
Yes that is correct
That is the remaining annual leave hours. and leave loading wasn't an entitlement as you haven't been with us for 1 yr.
According to the award you weren't entitled to annual leave unless you have worked for 12 month with us, so you got the good end of the straw.
This is the final termination payment, all entitlements have been paid plus some. I added an extra 8 hours on the annual leave to make it easier, which I didn't have to do.
Sounds like a top bloke, I didn't realise you hadn't even been there a year! You got a great deal!!!
He must really respect the work that you did for him.
