Anyone ever tried making their own sausages?

I've been thinking about it. Sausage casings, a machine.... and the sausage world is your oyster.

Have done a few runs with my local butcher, but never at home. He does all kinds of gourmet snaggas so it's pretty cool.

I think a robocoup + attachment to do the snags is about $2K. Probably cheap snagga only stuff out there these days though?

Can pick up a hand mincer with a sausage attachment for fark all, can get an electronic one that is decent quality for under a few hundred, you just have to hand twist the sausages (OOoooooOOOooo

).
