Have discovered a new cool thing with hamburger patties.

 

Half kilo beef mince

Grate an onion (one big or two small)

two eggs

Paprika powder (couple of tablespoons)

Chop up some green herbs (made some last night with parsley, dill, and shallots)

two cups of breadcrumbs

three to four good dollups of greek yoghurt

 

mix by hand until it's like playdough. if its too wet and sloppy, add breadcrumbs. if it's too dry, add yoghurt.

 

make patties by hand. then crumb them(I did this once with crushed up cornflakes for extra crispiness). ordinary breadcrumbs are fine.

 

straight onto a hot pan with extra virgin olive oil (or, what I am in love with ATM: rice bran oil)

 

 

winner.

Marked this down as something to try out.

Something I've been experimenting with over the last month or so.

 

Stupidly easy to make, with surprisingly tasty results.

 

 

I usually serve it on a plate with some salad, basmati rice, and lashings of toum (Lebanese Garlic Sauce).

 

 

Also, I forgot to add to that little recipe, I usually crush 4 gloves of garlic into it. It's subtle.

Onion?!

 

 

Can't even notice it in the burger. Just adds a very subtle flavour. No obvious onion-ness. You could use onion powder, but I hate using artificial shit in my cooking.

 

 

Like people who use crushed garlic that comes in jars from the supermarkets. Ugh. (stupidmotherinlawstupidlazybitch)

Yeah, I prefer fresh chopped or fresh crushed garlic over the jar stuff. I always have heaps of fresh garlic at home waiting to be used :D

Mr Beaks - never really terribly impressed with them for the price.

 

 

 

Anyone ever tried making their own sausages?

 

 

I've been thinking about it. Sausage casings, a machine.... and the sausage world is your oyster.
